Waste Not, Want More: Inside Our Resourceful Little Bakery Kitchen

Connect with us!

We may be known for decadent whoopies and chewy date bars, but behind the scenes, we’re running a kitchen that’s as resourceful as it is delicious.
In a world where “eco-friendly” often means expensive or aesthetic, we prefer the old-school route: reduce, reuse, recycle. Because what’s more sustainable—and sensible—than using what you’ve already got?
Here’s how we make magic with minimal waste, lower costs, and zero greenwashing.

 1. The Power Of Compost

Our food scraps don’t die in vain, they stay in the ecosystem as valuable, nutrient rich fuel. Carrot peels, beet trimmings, and banana skins find their final resting place in our compost bins, not a landfill.

Food is the single most common material sent to landfills in the U.S., and it's one of the easiest to recycle: just let nature do its thing.

Why it matters:

  • Diverts organic waste from landfill
  • Reduces methane emissions
  • Improves soil health, conserving water and promoting plant growth

Cardboard: Ship Smarter
Cardboard and paper waste sitting in America's landfills make up over $4 billion in lost economic value. That's tons and tons of useable reasources being thrown away every single day.

Each week our bakery gets deliveries in sturdy cardboard boxes- and every week, we reuse those same boxes to ship our own orders. Our packaging may not look the exact same every time but it works, it saves money, and it keeps perfectly useable materials out of the trash.

Why it matters:

  • Slashes our packaging material costs
  • Cuts back on waste volume
  • Extends the life cycle of every box (and makes our UPS guy raise an eyebrow)

Sugar Bags, Reinvented
Those heavy-duty paper bags our organic coconut sugar comes in? We give them a second life as padding and insulation for outgoing shipments.

Durable, food safe, and already on hand- turns out you don't need to order fancy crinkle paper to protect a cake.

Why it matters:

  • Saves us from buying extra packing materials
  • Keeps packaging low-waste and low-impact
  • Gives old bags a new life

Let's Be Real:

Being resourceful isn't just good for the planet, it's smart business.

Every reused box, every composted peel, every sugar bag saved from the trash? That's less we spend on waste management, less we spend on supplies, and more we put towards sourcing clean, ethical ingredients that actually matter.

Because sustainability isn't about optics. It's about outcomes.
