Water activity (Aw) is one of the most overlooked tools in recipe development. It doesn’t measure how much moisture is in your product — it measures how much of that water is available. That distinction is everything, in vegan and gluten-free baking especially. When sugar, hydration, fat, starch, and binders run differently because there’s no gluten or eggs to buffer mistakes, Aw becomes a precision tool. It tells you if your bake time is right, if your hydration is balanced, and if your sugar and fat are properly binding water. Too high? Gummy texture and short shelf life. Too low? Dry and crumbly. It also allows you to intentionally extend shelf life safely instead of guessing.
We use the WA-60A Water Activity Meter in our bakery. It’s straightforward: let your baked good cool to room temperature, place a small representative sample in the sample cup (not the crust only — test the interior), seal the chamber, and wait for the reading to stabilize. That number tells you exactly where you stand. For cakes, we typically target the mid-0.70s; for cookies, lower; for breads, much higher.
