The Five Most Underrated Baking Ingredients
After 20+ years of professional vegan and gluten-free baking, I’ve learned something simple: most baked goods don’t fail because of complicated techniques. They fail because they’re missing a few small ingredients that quietly improve flavor, structure, and moisture.
These aren’t the flashiest or most talked about ingredients, but for vegan and gluten-free baking they are the key to a successful bake.
Salt is the single most important flavor enhancer in baking. Without enough salt, baked goods taste flat, overly sweet, and one-dimensional.
Salt works by suppressing bitterness and amplifying aromatic compounds, making every ingredient taste stronger. This is why a pinch of salt makes chocolate taste deeper, caramel taste richer, and fruit taste brighter.
Salt also plays a structural role. In wheat doughs it tightens gluten networks, improving elasticity, gas retention, and crumb structure. Even in gluten-free baking, salt still performs its main job: bringing all the flavors into focus.
The second ingredient I add to almost every recipe is acid. Common baking acids include:
• vinegar
• lemon juice
• buttermilk
• yogurt
• sour cream
• sourdough starter
Acid increases flavor contrast, preventing desserts from tasting dull or overly sugary. It makes chocolate taste more intense, fruit taste brighter, and batters taste deeper and more balanced.
Most of the time, you won’t taste the acid itself. You’ll just notice the bake tastes better.
Acid also improves leavening, since baking soda requires acid to work properly. When acid reacts with baking soda it produces carbon dioxide gas, which helps baked goods rise.
Without enough acid, baking soda can leave a metallic or soapy taste, and you’ll be left with a poor rise and dense crumb. Acid helps create cleaner leavening and softer texture.
Acidity lowers pH, which slows the growth of mold and spoilage microbes. That’s why many commercial breads use ingredients like vinegar or fermented starters. Acid isn’t a preservative by itself, but it supports longer freshness when combined with proper moisture and packaging.
One of my favorite ways to add acidity is sourdough starter, even in recipes that aren’t bread. Sourdough contains lactic and acetic acids produced during fermentation. It adds deeper flavor and natural acidity for leavening reactions, as well as improving shelf life. Even small amounts can elevate muffins, cakes, pancakes, and quick breads.
In gluten-free baking, structure is the biggest challenge. That’s where psyllium husk becomes incredibly valuable.
When hydrated, psyllium forms a gel network that mimics some of the structural properties of gluten.
This helps dough hold gas, stretch, and stay cohesive instead of crumbly. It also allows gluten-free doughs to behave more like real dough instead of thick batter.
Gluten-free baked goods often dry out quickly because starches retrograde faster than gluten systems. Psyllium binds water and helps maintain a softer crumb, reduce crumbling, and slow staling. It’s one of the most effective tools for improving texture and shelf life in gluten-free baking.
For vegan baking, aquafaba can be a powerful structural ingredient.
Aquafaba is simply the liquid from cooked chickpeas or canned chickpeas. What makes it special is its ability to trap air and form stable foams, similar to egg whites. This makes it useful for lighter bakes like meringues, macarons, mousses, and airy batters.
When whipped, aquafaba creates aeration and lift, helping vegan baked goods avoid the dense texture that sometimes happens without eggs. Do not use aquafaba for next day batter, as it only lasts for a 1 or 2 hours before the air pockets are released.
These include:
• agave
• maple syrup
• honey
• invert syrup
Invert sugars contain glucose and fructose, which behave differently than regular sucrose. They help retain moisture, reduce crystallization, create softer texture, and extend shelf life. They also help keep baked goods softer for longer, which is why many professional bakeries incorporate small amounts of invert sugars in cakes, cookies, and bars.
Small additions of these ingredients can dramatically improve flavor depth, crumb texture, and shelf life.
