FOOD ALLERGY POLICY

 

Every year, 3.4 million people in the United States go to the emergency room due to a severe food allergy reaction. Allergic reactions are unpredictable and should be monitored closely. What seems like a mild reaction can become life threatening quickly. Sensible Edibles is committed to reducing the risk to our employees, customers, and vendors regarding the provision of food and the consumption of allergens in food which could lead to an allergic reaction.

Although we are unable to guarantee a completely allergen free environment, we aim to minimize the risk of exposure, encourage self-responsibility, and plan for an effective response to possible emergencies.

 

OBJECTIVES OF THIS POLICY

• To promote food allergen awareness to employees, customers, and vendors at Sensible Edibles.

• To ensure that relevant food allergy training and food hygiene training are provided for all staff.

• To ensure appropriate information and support is available for everyone.

 

WHAT IS A FOOD ALLERGY?

Food allergies are an immune system response to a food. The body mistakenly reacts to an ingredient which it thinks is harmful and releases antibodies to fight the threat. This creates symptoms like:

  • Itching
  • Hives    
  • Swelling
  • Abdominal cramps
  • Hives
  • Difficulty swallowing or speaking
  • Nausea
  • Vomiting
  • Anaphylactic shock (A dangerous drop in blood pressure accompanied by swelling which makes it difficult to breathe. This can be life-threatening.)

Anybody can develop a food allergen or intolerance at any time in their life, regardless of whether they consumed the food before. A person with an allergy is at risk even if they consume a small amount of the food allergen.

 

WHAT IS FOOD INTOLERANCE?

This does not involve the immune system in the same way and is not usually as severe as a food allergy. Symptoms usually take longer to appear and may include headaches, fatigue and digestive problems. With an intolerance, you may be able to consume a small amount of the problem food without a reaction.

 

COMMON FOOD ALLERGENS

There are currently 9 major allergens which must be clearly stated if they are present in the product:

  5. Crustacean Shellfish
  6. Tree Nuts
  7. Peanuts
  8. Soybeans
  9. Sesame

CELIAC DISEASE

Celiac disease affects 1 out of every 133 Americans. It is a chronic digestive and immune disorder triggered by gluten, which is naturally found in wheat, barley, and rye. These ingredients are typically used in bread, pasta, cookies, cakes, and many processed foods.

Symptoms include:

  • Bloating
  • Diarrhea
  • Nausea
  • Gas
  • Constipation
  • Fatigue
  • Weight loss
  • Hair loss
  • Anemia

There is no cure for Celiac Disease. Affected individuals must follow a gluten-free diet for life.

 

FDA LABELLING GUIDELINES

The FDA requires that food labels identify the food source of all major food allergens used to make a product. We are also required to list the type of tree nut used, if any. We list these immediately after the list of ingredients on our packaged items. At the café, all products have a card placed in front of them which indicates the ingredients used. We are proud to be a 100% gluten-free and peanut free facility. We use easy-to-read icons on our bags to indicate common allergens (i.e. Soy Free, Nut-Free, Dairy-Free), but please always read the ingredients label before purchasing.

Our facility carries ingredients including, but not limited to: almonds, hazelnuts, coconuts, soy, milk and eggs. We cannot guarantee that our products have not come into contact with an allergen. We are a peanut-free and gluten-free facility. 

 

PROCEDURES

In our kitchen, we use color coding, utensil segregation, equipment segregation, table differentiation, careful packaging measures, and other preventative measures to reduce the risk of cross-contamination. Tables are scrubbed down after each use. Ingredients are stored separately. All staff is trained extensively on these procedures. We also require our bakers to pass a food safety course. Extreme care is taken to ensure the safety of our staff, customers, and vendors, but we cannot guarantee the elimination of trace amounts of allergens.
